One of our favorite parts of Halloween are the treats!

Pumpkin Pasties

Makes about 3 dozen miniature pasties.

2 eggs, slightly beaten
3/4 cup sugar
1 1 lb. can pumpkin
(or 2 cups fresh, roasted in the oven then pressed through a strainer)
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
1 2/3 cups evap. milk (1 can)
1/2 tsp. allspice
9 oz pie crust pastry (enough for two single standard pie crusts)

Bake the pie filling only (no crust) in a large greased casserole dish in hot oven (425F) for 15 minutes. Keep oven door closed and reduce temp to moderate (350 degrees F/180 degress Celsuis) and continue baking for 45 minutes or until table knife inserted in center of dish comes out clean. Cool on wire rack.

Make or purchase pie crust pastry. Roll thin and cut into circles approx 4" in diameter. Put a spoonful of the cool pumpkin mixture towards one side of the center of the circle. Fold over the crust into a half-circle and firmly crimp the edges closed. Slice three small slits in the top for venting, place on a greased cookie sheet, and bake only until crust is a light golden-brown. The pumpkin filling will begin to make the crust soggy, so best baked the day of serving. Can be made ahead by freezing the assembled pasties unbaked on cookie sheets, then thawed and baked the day of serving. Great served at room-temperature

Boo Cup Desserts

Makes: 15 servings, 1/2 cup each

Ingredients:
3-1/4 cups cold fat free milk

2 pkg. (4-serving size each) Jell-O Chocolate Flavor Fat Free Sugar Free Instant Reduced Calorie Pudding & Pie Filling

1 tub (8 oz.) Cool Whip Free Whipped Topping, thawed, divided

1 pkg. (6-1/2 oz.) Reduced Fat Chocolate Sandwich Cookies, crushed, divided

30 miniature semi-sweet chocolate chips

Directions:
POUR milk into large bowl. Add pudding mixes. Beat with wire whisk 2 minutes or until well blended. Gently stir in 1/2 of the whipped topping and 1/2 of the crushed cookies.
SPOON 1 Tbsp. of the remaining crushed cookies into each of 15 individual cups. Spoon pudding mixture evenly into cups; top with remaining crushed cookies.
DROP remaining whipped topping by spoonfuls onto desserts to create "ghosts." Decorate with chocolate chips to create "eyes." Refrigerate until ready to serve. Store leftover desserts in refrigerator."

Monster Mashed Potatoes- Submitted by Ranger Haldir

1/2 pound cooked and mashed white potatoes
1/2 pound cooked and mashed purple potatoes
1/2 pound cooked and mashed sweet potatoes
1 pound cooked and pureed broccoli
1/2 cup butter
1/2 cup heavy cream
salt
pepper
freshly grated nutmeg

Place each vegetable in a separate bowl. Add 2 tablespoons butter, 2 tablespoons cream, and salt, pepper, and nutmeg to taste to each vegetable. In a large bowl gently swirl the four vegetable mixtures together, making sure that each color remains distinct in areas. Serve hot."

Monster Meatloaf- Submitted by Ranger Haldir
---------------------------------------------------------------------------------1 cup coarsely chopped mushrooms
1/4 medium onion -- chopped
10 ounces frozen chopped spinach -- thawed and drained
1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
1 pound ground turkey breast
3/4 cup old fashioned oatmeal -- uncooked
1/2 cup skim milk
1 egg -- lightly beaten
1 teaspoon italian herb seasoning
3 cups spaghetti sauce
2 pimento stuffed olives -- (eyeballs)
Few Corn kernels -- (teeth)

Preheat oven to 375ºF. Saute mushrooms and onion in a heavy nonstick skillet over medium low heat 4-5 minutes, or until onion is tender. Remove from heat (drain off any excess oil) and stir in spinach, 1/4 cup mozzarella cheese and Parmesan cheese. Combine turkey and next 4 ingredients in a bowl. Season with salt and pepper to taste. Mix lightly but thoroughly.

To form the monster corpse, in an ungreased baking pan, sculpt 2/3 of meat mixture into a body. Make a deep indentation down center of torso and fill with spinach mixture. Top with remaining meat mixture, sealing edges to completely cover filling. Make eyes on the monster by using the olives. Use corn to make teeth and a pimento from an olive to make a tongue.

Pour spaghetti sauce around body and bake 45-50 minutes or until cooked through. Sprinkle torso with remaining 1/4 cup mozzarella cheese and return to oven 1-2 minutes or until cheese is melted.

After baking, you may stick a knife into the monster's torso for effect if you like.
